Head Chef Kevin Bray, a member of the Chehalis tribe, boasts a 15-year culinary career that began when he was a dishwasher at the casino. During his tenure, Bray has worked in various capacities for all the casino’s restaurant kitchens. Once he got his culinary degree in 2006 from South Puget Sound Community College, he moved up the ranks and now heads the entire kitchen staff at the Steakhouse.
Bray has updated the menu to include new appetizers such as breaded calamari steak strips and pink peppercorn tenderloins, but he honors savory English traditions for serving specialty dishes of prime rib and steak.
He slices classic prime rib au jus tableside for his guests and has kept all the rich, savory accoutrements and side dishes intact as part of his serving spectacle. Guests may indulge in side dishes such as whipped garlic mashed potatoes, creamed spinach, Yorkshire pudding and zestyfresh horseradish. The New York Strip is succulent, savory and served with Bray’s own unique crispy tobacco-breaded onion rings.
