According to Chef Mark Bodinet, the restaurant uses sustainable practices and has developed relationships with growers, ranchers, fishermen and local artisans to bring the best ingredients to the table. “Our cuisine is seasonal and possesses a strong artistic expression,” he says.
Among the restaurant’s savory starters is “Foraged and Found” Matsutake Mushrooms with a soft poached duck egg, creamed spinach and salumi lomo. Mouthwatering “large plate” options include Caramelized Diver Scallops with white truffle crème and chanterelle mushrooms, and Lummi Island Poulet Bleu with candied pine nuts and Périgord truffle jus.
