
Augustin and Lupe Galicia brought their family recipes to the 222 Market Building in 2018 and opened Dos Hermanos Mexican Kitchen. You’ll recognize items on the menu like tacos and chile verde, but Dos Hermanos offers more that you might expect. Everything is made from scratch. Corn and flour tortillas are made from organic ingredients. The refried beans come from beans soaked overnight rather than a can. Additionally, the Galicias operate the business with their youngest son, Adrian, and two longtime employees, Andres and Blandina. This welcoming team is always there to serve consistently well-prepared meals and cocktails.
“We take no shortcuts and use fresh ingredients. It is organic corn for tacos and organic unbleached flour for the flour tortillas. We take the seeds from the peppers when we make our sauces,” explains Augustin. Tending to all these details brings exquisite textures and flavors to every dish. “It’s a lot of work,” he adds, and it’s just what they do at Dos Hermanos.
Though Augustin was born in the U.S, his younger years were spent in Mexico. He helped his parents with their taco stand, learning every job it involved. At 13, he returned to Los Angeles and joined the army at 18 for what was expected to be a three-to-four-year stint. It turned into a 21-year career.
Upon retirement, the Galicias moved back to Lacey where they owned a home. They opened a Mexican food truck at JBLM whose popularity led to a second truck. For five years, they primarily served their well-tested, authentic recipes to military personnel.
The art-filled, comfy eatery has tables, a bar counter, and is suitable for a date night, a family meal, or a small party. There is a menu of margaritas along with beer and wine. It’s located at 222 Capitol Way which is also home to Sofie’s Scoops, The Bread Peddler, Chelsea Farms Oyster Bar and Fleurae Floral.
Historic downtown Olympia is filled with locally owned businesses that keep our community vibrant. Parking is free after 5:00pm and on weekends. It is worth your time to explore. Be sure to bring your appetite.
