
Sweet memories of Texas are kindled when your tastebuds meet Hector’s Tacos. Make your way to the rebuild that has been underway on the corner of Fourth and Central Avenues. It’s officially Tex-Mex, and if you’re in for breakfast tacos (and more), this is your place. Owners Aaron and Lauren Rodriguez and Kurt Loertscher have turned their vision of authentic tastes with engaging service into reality.
Many recipes originate from Aaron’s father, Hector, and his grandmother with help from his brothers. Food is prepared daily with the chopping of pounds of tomatoes and roasting jalapenos. Beans are soaked overnight. Hector’s food is cleanly made for everyone and has both vegetarian and vegan offerings. Everything is gluten-free except for their amazing flour tortillas.
Order at the window and take it with you or dine in. The upstairs keeps you above the street action while enjoying the beauty of the Northwest. You can select a from-scratch tequila cocktail like the Paloma, a sangria margarita, or ranch water (adults only). There are local Mexican and Texas beers, and Mexican Coke along with other soft drinks.
“Hector’s Tacos is a wonderfully unique addition to the Olympia community,” said Casey Kilborn, SVP/Chief Relationship Officer with OlyFed. “From their bright colors, SW inspired indoor/ outdoor architecture, quick and casual service to their amazing Tex-Mex flavors, delicious hand-held dishes and friendly staff, it feels like a vacation getaway right here at home in the South Sound.”
The original structure was built in 1927. Many locals remember its various incarnations. The new design has created a multi-level cantina with an enclosed veranda on the main level and a structurally retrofitted rooftop deck. The west side patio is still in progress for more seating. Kurt was the primary (basically the only) person who did the construction. Lauren and Aaron, who both grew up in Texas, bring their love of great food with great service to the table.
“It’s about food, fun and community – both English and Spanish,” says Aaron.
