Standing tall within Tacoma’s Ruston corridor is the new-fashioned Wren & Willow Design, Inc. Carriage House where Wren’s Nest Baking Co. is taking gluten-free to a whole new level.
Situated on the building’s street level, owner Laureen Skrivan, and a skilled bakery ensemble that includes Pastry Chef Coco Kislinger-Macaluso, and Head Baker Erin Walter, have created a 100% gluten-free menu where– tasting truly is believing.
Manifesting as a welcoming spot for ALL to delight in a sweet or savory treat, and feel connected, Skrivan has managed to fill a void.
“We wanted to create a space where even those suffering from celiac’s, or anyone avoiding gluten can come and feel free to choose from anything that’s on the menu,” says Skrivan. “It’s about people, and having a place where everyone can enjoy time with friends and family over a savory or sweet bite.”
In fact, gluten-free has never tasted so good, a well-merited nod to Kislinger-Macaluso, and Walter, who painstakingly craft each and every recipe.
“There’s a lot that goes into it. We work collectively in perfecting our recipes. Refining the taste, and the texture, and working until we get it right,” says Kislinger-Macaluso. “Besides making things that are delicious, we’re also elevating the ingredients we use, so it’s healthier to put into your body, too.”
Sample from a list of sweet confections that includes everything from tartlets and hand pies, to cakes, cookies, and scones. If that’s not enough, specialty items like cinnamon rolls, brownie bites, and lemon bars will make a believer out of you.
A savory menu that’s just as long features hearty kolaches, empanadas, quiche, and more. A selection of bread also is available by the loaf. Choose from sourdough, multigrain, and seeded molasses as the menu continues to expand.
Settle in to cozy snugs. The small quiet rooms set off to the side offer just the right amount of privacy for a solitary workspace, or coffee-date. When the weather warms up a phenomenal view awaits bakery guests on the rooftop, too.
What’s more, whether it’s your first or 20th visit, relaxing by the two-way fireplace, or charming dine-in area (and available event space) brings a quaint familiarity you’ve been here before, and will definitely come again.
